What is Kombucha?

To put it simply, kombucha is a probiotic tea drink that’s taste ranges from tart, to vinegary to sweet and sour. Kombucha is made when steeped tea, sugar and a culture called a Scoby (symbiotic, culture of bacteria and yeast) come together and ferment. The fermentation process takes anywhere from 7-21 days in a dark warm place where the scoby begins to eat at the sugars and tea. The cool thing about kombucha is that it has tons of probiotics in it that are good for your gut. You could call it a “feel good soda” of sorts.
